Creamy coconut rice pudding with a rainbow 🌈 of fruits and berries 😍❤️ Via @plantbased_food_and_travel
I used to eat this kind of bowl all the time and as I was scrolling through my blog I came across some pretty delicious looking fruity creations, so of course I had to make a fruit bowl today with my signature creamy coconut rice pudding 😁👏🏻. Do you like rice pudding? 🍚 .
Here is the recipe for you since my blog isn’t online at the moment:
2/3 cup (125 g) jasmin rice (or Milchreis here in Germany).
3/4 cup (180 ml) plant based milk or water.
2/3 cup (160 ml) coconut milk (full fat).
1-2 tsp coconut sugar or another sweetener of your choice.
1 tsp coconut butter (optional).
Put all the ingredients except the coconut butter in a pot and bring to a boil. Reduce to a low heat, cover and let it simmer for roughly 15 minutes (it takes longer if you use “Milchreis”). Do not stir too often and keep the lid closed.
Remove from heat, add the coconut butter and maybe some more coconut milk if desired. .

This morning has been AMAZING! I started the day with an incredible workout that really put me in a fab mood ✨...& to think I didn’t want to go to the gym bc it was 7am 🙈🙊 We’ve all been there...we let the excuses pile up and prevent us from doing what we ought to do. I’m tired..I’m not feeling it..I can do it later...sound familiar?? 🙋🏻♀️ Ya girl, I do it too.
Don’t give yourself the opportunity to push off another workout or a healthy decision..NOW is the time to do something for yourself! One workout, one long walk, or one nutritious meal is a step closer to living a healthier life! Small choices lead to big results 🎉 so the next time you find yourself making up excuses ask yourself, “Does this decision honor my goals and my body?” Now don’t get me wrong, sometimes you need rest! And if you do, take it easy. Also, having a treat every now & again WONT kill your progress!
What I’m saying is motivation doesn’t always come easy and you’ve got the will power to move yourself in the direction you want to do. YOU have control over your mind, body, and life. You can do this 👏🏼😄💛
